As appetizers go, deviled eggs are often the life of the party and the first ones to go. Here is a delicious and easy recipe you can make and impress your guests.

INGREDIENTS
2 hard-boiled eggs
1/2 avocado
2 tomatoes
1 lime
3 tablespoons olive oil
1 garlic clove (optional)
1/2 English cucumber
Salt, to taste
Ground black pepper, to taste
DIRECTIONS
- Bring the eggs to room temperature. You may place them in warm water. Put them in a small pot with salty water and bring to a boil. Let boil for 10 minutes. Remove from the stove, throw away the cooking liquid and cover with cold water to cool faster. Peel the eggs and cut into halves. Remove the yolks and set the whites aside.
- Place the yolks in a mixing bowl, add the avocado flesh, olive oil, salt, black pepper and crushed garlic if using. Blend until smooth.
- Spoon the mayo into the white halves.
- Cut one tomato into two parts. Remove the seeds from one half, and chop into small cubes. Place them on top of the avocado mayo. Slice the remaining tomatoes and cucumber. Serve with the deviled eggs. You may even add chopped cilantro if you desire.
