Prunes are used for digestive health in part due to the type of sugar they contain, called sorbitol. Sorbitol functions as a natural laxative by pulling water into the digestive tract. As such, you don’t want to eat too many prunes at one time. Prunes are also a powerhouse of nutrients and are high in fiber. Fiber is essential for properly functioning digestion and helps to cleanse the colon. Prunes are high in vitamin A which is needed for healthy vision. Prunes are high in antioxidants- even higher than blueberries. Antioxidants help protect our cells from damage from free radicals. Prunes are high in potassium which is an electrolyte needed for heart and nerve functioning throughout the body. Prunes have been shown to support bone health and are anti-inflammatory. Iron is found mainly in meat products, but prunes are high in this essential mineral.
One study showed that walnuts may be beneficial for digestive health by increasing the amount of good bacteria in the gut. Real peanut butter (not the stuff loaded with powdered sugar) is high in fiber, which as discussed earlier, promotes healthy digestion. Coconut oil helps with digestion in a different way. Coconut oil helps the body absorb fat-soluble vitamins and minerals. It also helps eliminate harmful bacteria and candida which can help fight stomach inflammation and prevent stomach ulcers. Shredded coconut is also high in fiber, and its high fat content helps your body absorb fat-soluble nutrients like coconut oil. This includes the antioxidants vitamins A, D, E and K.
- 1 cup prunes
- 3/4 cup walnuts
- 2 tablespoons peanut butter
- 1 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 3 tablespoons shredded coconut
- Chop the prunes in small pieces.
- Place the walnuts in a food processor and pulse for 30 seconds.
- Add the prunes, peanut butter, coconut oil and vanilla extract.
- Process until the ingredients begin to come together.
- Wet your hands to make 10 medium balls.
- Spread the shredded coconut on a plate and roll all the balls or only half of them, as you prefer.
- Keep in the refrigerator for at least 60 minutes before serving.
