This recipe is a quick and easy-to-prepare beef stir-fry that’s packed with healthy ingredients and is full of vibrant flavors. Sweet peppers add sweetness, while garlic gives it an addictive and savory flavor. Serve this dish with brown rice or quinoa for a complete meal to fill you up!

“Sweet Pepper Beef Stir-Fry”

Ingredients

  • 8oz lean red meat
  • 1 tablespoon coconut oil
  • 1 tablespoon lemon juice
  • 1 cup broccoli florets
  • 1 teaspoon garlic
  • 1/2 cup onion, chopped
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1/4 cup low-sodium beef broth
  • 1 carrot, cut into thin wedges
  • 1 green bell pepper, cut into wedges
  • 1 red bell pepper. cut in wedges
  • 1 orange bell pepper, cut into wedges

Directions

  1. Thinly slice the meat across the grain. Put the oil in a wok or skillet over high heat. Add the beef and stir-fry for about 3-4 minutes when it’s hot.
  2. Add red, green and orange pepper, garlic, broccoli, carrot, lemon juice, onion, and stir-fry for 1 minute.
  3. Add parsley and oregano, and stir fry for another minute.
  4. Add broth.
  5. Stir until sauce thickens.
