Double Layered Mousse with Blueberries

Most of us love chocolate. However, most chocolate desserts are filled with added sugar and saturated fats. Our Double Layered Mousse layers chocolate and vanilla and is topped with blueberries. The best part about this recipe is that it is made with avocados, bananas and honey, so you can enjoy this treat and feel good about it. 

This recipe takes 30 minutes to make, and can be made in bigger batches and served as a delicious and healthy dessert after dinner.

Avocado makes this chocolate mousse creamy and rich, and avocados are packed full of health benefits. They are high in fiber and thus help you stay full and improve digestive health. Avocados contain more potassium than bananas and are loaded with heart-healthy monounsaturated fatty acids. Eating avocados has been shown to lower cholesterol and triglyceride levels. Avocados also contain antioxidants that are important for eye health.

Bananas are rich in vitamin B6, vitamin C, fiber, potassium and manganese. They can also aid in digestion and help with gastrointestinal issues. They are a great source of energy and are fat and cholesterol free.

Topping this layered mousse with blueberries not only tastes good, but also provides you with all of the health benefits of blueberries. Blueberries have been shown to help heart health, bone strength, skin health, blood pressure, diabetes management, cancer prevention and mental health. They are high in vitamin C and vitamin K.

Cocoa powder is rich in polyphenols, which are naturally occurring antioxidants in plant foods linked with numerous health benefits. These benefits include reduced inflammation, increased blood flow, lower blood pressure, and improved cholesterol and blood sugar levels.

Coconut oil contains good cholesterol (high density lipoproteins) which may help fight heart disease and high blood pressure. Coconut oil helps boost energy and aids in digestion.

DIRECTIONS

Prepare the Chocolate Layer

  1. Chop the avocado and banana and place in a food processor.
  2. Add the honey, cocoa and coconut oil.
  3. Process until smooth.
  4. Divide between two serving glasses and place in the freezer for 10 minutes.

Prepare the Vanilla Layer

  1. Clean the food processor bowl and add the ingredients for the vanilla layer.
  2. Mix until you have a creamy texture.
  3. Spoon over the chocolate layer and place in the freezer for 10 additional minutes.
  4. Serve with two tablespoons of fresh blueberries on top and serve.
