Deviled Eggs With Avocado Mayo
A. Ingredients
2 hard-boiled eggs
1/2 avocado
2 tomatoes
1 lime
3 tablespoons olive oil
1 garlic clove (optional)
1/2 English cucumber
Salt, to taste
Ground black pepper, to taste
B. Direction
- Firstly, bring the eggs to room temperature. You may also place them in warm water. Then, put them in as small pot with salty water and bring to a boil. Afterward, let boil for 10 minutes. And then, remove from the stove, throw away the cooking liquid, and cover with cold water to cool faster. Peel the eggs and cut into halves. Then, remove the yolks and set the whites aside.
- Secondly, place the yolks in a mixing bowl, add the avocado flesh, olive oil, salt, black pepper and crushed garlic if using. Blend until smooth.
- Thirdly, spoon the mayo into the white halves.
- Fourthly, cut one tomato into two parts. Then, remove the seeds from one half, and chop into small cubes. Afterward, place them on top of the avocado mayo. And then, slice the remaining tomatoes and cucumber. Lastly, serve with the deviled eggs. You may also even add chopped cilantro if you desire.
